I was there 5 nights, 3 of which were in Xiamen. I'd already been to Guilin and Hong Kong last year and I'd used up most of my time off so unfortunately I didn't get to see more than Xiamen, the Fujian Tulou, and Gulangyu Island (I spent the first week of November in Cuba as well).

Fascinating Hakka communal homes. Interesting destination. If not classified, what brought you to rural China?

Wanted to see the tulou in real life before seeing them in Shenmue III :p I also knew that they'd be more popular in the next year or so after seeing one in the trailer for the new Mulan movie, and sure enough the tour guide told me they'd already had a few couples who had been on tulou tours because of that film. I was planning to go back in March but read that it rained a lot that time of year (a friend of mine did actually go around that time with his wife who is from Fuzhou, and it did indeed rain quite a bit), so I thought November would be a good time to go. I would definitely recommend, Xiamen/Fujian, Guilin, and Hong Kong.
