It's likely that he was carving those images for years. Remember that Ryo found a blueprint of both mirrors inside Shenhua's house so that was most likely the basis for the images in the cave. If it's true that he was kidnapped by the Chi You Men we'll probably learn the reason why in III.

Speaking of Shenmue II's ending, I'll be more than a little disappointed if - when I get round to playing the re-releases - they haven't added "for realz this time" after it says "the story goes on".
