I've not started Shenmue II, but perhaps the Trophy requires dialogue to be exhausted?

I know I'm getting through the dialogue because Ryo bows at the end. I'll keep trying...

I've managed to get it to work, but I had to say bye twice to Jianmin!

You could also try saying goodbye to every person Ryo is able to say goodbye to, just in case d3t fucked up somewhere. Here's a list of the people Ryo can say goodbye to, not including the chef at Dou Jiang Diner: http://www.shenmuedojo.net/forum/viewtopic.php?p=395753#p395753
