Oooh, interesting! For the consoles I own (do note; I did not own any console in its current gen, save for PS3 and PS4; EVERYTHING was acquired after console production ceased, so I will post what was my favourite when I first-played the console and what is now).

SG-1000: Flicky (Flicky)
SMS: Hang On (Dynamite Dux)
GB: Pokingman Blue (Pokingman Silver)
Genesis: Jungle Strike (Alex Kidd in the Enchanted Castle)
Atari Lynx: Batman Returns (Chips Challenge)
GameGear: The Majors: Pro Baseball (Jungle Strike)
Sega CD: Final Fight CD (Final Fight CD) (it IS my Favourite console game ever, so yeah lol)
32X: Knuckles Chaotix (Virtua Racing)
Saturn: Virtua Fighter (Panzer Dragoon Saga)

PS3: Yakuza 3 (Yakuza 3)
PSP: Kurohyo: Ryu ga Gotoku Shinso (Kurohyo 2: Ryu ga Gotoku Ashura Hen)
PS4: Ryu ga Gotoku 6 (Ryu ga Gotoku 6)

As for consoles I've played but don't own:

PSX: One of the Twisted Metals (Tekken 3)
PS2: Tekken Tag (Yakuza)
GC: Crush Hour (WrestleMania X8)
Box: Some X-Men game (Some X-Men game; it's the only game I've played on the console)

That's it!

PC -- I have no answer because PC never ends ;) But I guess maybe Doom is the one that stands out to me as the game that made me appreciate PC gaming as a kid.

Master System -- Alex Kidd in Miracle World

NES -- Super Mario Bros 3

Mega Drive -- Streets of Rage 2

Mega CD -- Sonic CD

32X -- Virtua Fighter (a really solid port given the hardware)

Game Gear -- Shinobi II: The Silent Fury

SNES -- Donkey Kong Country (absolutely love it!)

Saturn -- Virtua Fighter 2 (one of my favorite games of all time; and a hell of a port to hardware considered by many as not capable)

PlayStation -- Resident Evil 2 (or maybe Metal Gear Solid)

N64 -- WWF No Mercy (one of the best Wrestling games ever made)

Dreamcast -- Shenmue 1 and 2 (I can't separate the two, they are just one game to me; Jet Set Radio is a close second)

PlayStation 2 -- Shadow of the Colossus (one of the greatest experiences I've ever had with a video game)

GameCube -- Resident Evil 4

Xbox -- Panzer Dragoon Orta / Jet Set Radio Future (couldn't decide)

PlayStation Portable -- Metal Gear Solid: Peace Walker (I easily put 200+ hours into this game and don't regret a second of it)

Nintendo DS -- Elite Beat Agents / Osu! Tatakae! Ouendan! (Fucking love it in both its English and Japanese form)

Nintendo Wii -- Super Mario Galaxy

PlayStation 3 -- Yakuza 3 (or maybe Uncharted 2 -- I go back and forward between these two)

Xbox 360 -- Call of Duty 4 (laugh all you want, but COD4 really was a pretty damn good game)

PlayStation Vita -- Persona 4 Golden (the definitive version of Persona 4.)

Nintendo 3DS -- Super Mario 3D Land (Might be my favorite Mario game ever made -- the 3D effect is fantastic in this game and the one game that made that gimmick worthwhile)

PlayStation 4 -- Persona 5 (when all is said and done, it's the game I think about the most from this current gen)

Xbox One -- Didn't play too much Xbox One this gen. If I had to pick one? Probably Forza Horizon 3 since it's the one Xbox game I played the most this gen.

Doom 2 for PC, yes!! I forgot about it! First PC game I loved, fell in love with FPS games at that time all of them were pretty damn good until CoD and Halo 2 started the downward trend in the genre.

Also, thanks for mentioning RE4 on GameCube. I did enjoy that game a lot when it came out, I forgot it was a GC exclusive at launch, and for some reason the GC version was actually better than PS2 with this particular game. Have to amend my list.

Cool thread! Leaving out consoles I didn't ever play much or at all.

NES 1943/Mega Man 5 (yes, I love them still after MM3)
Genesis Sonic 3 & Knuckles
Saturn Resident Evil
PS1 Metal Gear Solid
PS2 Metal Gear Solid 2... MGS3...no... Yakuza 2... wait... Ico! FUCK
Dreamcast Shenmue (they're both one game together in my heart and mind)
XBOX Syberia
Gamecube Splinter Cell or Star Fox Adventure
Wii RE4
PS3 Yakuza 4
PS4 Shenmue 3
