I manually kept track of how many people were watching Shenmue HD on Twitch this past week.
These numbers are calculated by adding viewers from the "Shenmue" game title as well as the "Shenmue 1 & 2" title, at any given hour. And only when "Shenmue 2" was above 50 viewers (very rare) did I add those too.
For example, on Aug.21 at 2:31pm (Pacific) there were 1,150 people watching S1&2 and 9,713 watching Shenmue, which was the most people watching that day (as you see above: 10,863).

I suppose it would have been more interesting to know how many Streamers were playing, since these high viewer counts mostly come from guys who already have a large following by playing other games. Some of those names include: AvoidingThePuddle, kss7749 (Korean), CarcinogenSDA, MoraisHD (Portuguese), Robbaz, tangent, mobilmobil (Chinese). The person who got more than 20k of those viewers on Aug.26 (Sunday, 1:27pm Pacific time) was the streamer lirik.

I'm not sure why Twitch put Shenmue at rank#6 when Hearthstone had 50k viewers at that time.

If you'd like to see the raw data of all the times I recorded viewer counts:

From that ^ you can see that the average view count is often less than 2k after Day 1. If you want to know the exact averages, let me know (I have the spreadsheet with totals ready to go).
You'll also notice I didn't keep track while I was sleeping. I did try to setup a page monitoring service from https://visualping.io but even after I adjusted the capture time frame, it still only sent me screenshots when I was awake.
